Go onto the Play Store and Search "Launcher", try out a few and decide which one you like to replace the default interface (launcher). I'm currently using Arrow Launcher which is much slicker than the default.

Honestly it sounds like a wiring issue if it's doing a full cold boot each time you turn off, switch around the ignition and live wires, and it should remember which *default* app you were using for playback when the unit was switched off and go straight to it. *have not worked out how to default to...
