thank you for your response. As far as I know that's basically the same head unit as I already have, but with android 7.1 and 2 GB ram. But it still has the same issues I'm currently having with my head unit. Is that the only alternative?

So, I checked with my Carrier who provided the SIM and they state that the SIM they have provided me will work with my Dongle and Android. ... Therefore this seems to be a product problem, likely something to do with how the Android base has been modified from generally available versions on phones...

I have the same problem with my head unit and it's no issue with my sim card. A temporary fix is to unplug and replug the 3g stick while the unit is always powered on. Then it connects again with correct apn and internet works fine.
You could try that.
