I don't have a head unit. However I am almost sure this will work.
Instead of one microphone, having 2 makes it like a microphone array.

Multiple External Microphones
I do not have a head unit so I do not know how good or bad mic quality is. However, since the external microphone is fairly cheap, I was thinking maybe buying 2 of them and putting one on each end of the dash.
