How can I customize Home Screen Pages ?

I've just installed my Android 7.1 Pumpkin unit, and I'm very happy with how easy to was to install, as well as how well it all works.
The interface is functional enough as it is, but it seems to be very limited in how I can configure it. I realize from other posts I cannot add widgets to main home screen, but how can I add widgets to other pages on home screen? Where do I access my widgets? On most launchers, you long press empty space on home screen and then you can access widgets. Not on this unit.
Alternatively, I was thinking of using Nova Launcher, as I use it on all my other Android devices. However, I can't find the Radio widget in Nova. Is this widget ONLY available if I use the default Pumpkin launcher ?
Lastly, as other people have said, if I drag icons to home screen, or change the icons on the 'dock' at bottom of home screen, some of them disappear when I reboot the unit. Is this 'normal' ? If so, it's a very (no offence intended) badly designed launcher - after all, one of hte reaons people like Android is because of it's customization options.
